Thank you, Robin, for sharing this, and Cate and Joni for your additional information. Robin, Are you aware of people outside of the Ethiopian and Eritrean community in your area making use of teff flour in any way? Seems like it would have great potential in sweet baked goods. I suppose one could also ferment a teff flour mix, as is done for injera, and incorporate it into a dry sourdough bread? Many possibilities. Speaking of which, Joni has some years' experience, of course. Joni, you once mentioned the different characteristics of ivory vs brown teff for your mixes. Do you have any further observations about that? An important message of the stack of sacks of teff flour in the photo is that all of this is produced in the US. I understand that there are two main companies processing teff - the Teff Company,/1 producing the Maskal teff shown in Robin's photo, and about which Joni commented, and Selam Foods,/2 marketing Selam teff. My understanding is that most of the grain teff is produced in parts of Idaho and Nevada. Cate, you mentioned a farm in Fallon, Nevada. That is in Churchill County, which I read not long ago has about a dozen commercial growers of grain teff. There are also efforts in other parts of the US, such as Oklahoma and one farm we know of in Michigan (Tenera Farms, the source for teff in the Teffola granola products/3). Of course some teff is imported from Ethiopia (this was not always the case, which provided the initial opening for US based growers). When I was based in northern Virginia, I found a small and busy Ethiopian foods shop with a selection of teff flour with different names, perhaps corresponding to provenances. They were selling the flour repackaged in clear plastic bags, evidently originally in larger sacks.
