I happened to see something by Sabina Jules about "doughut holes" made with fonio flour and pumpkin - no recipe, however.

From an eater's perspective, combining one or another millet with sweet potatoes or sweeter types of winter squash (pumpking, butternut) seems like a way to get an interesting flavor range onto the plate.
