Thank you, Robin, for sharing this article . That's a very strong statement by Prasad Metrani: "Millet will completely take over white flour or whole wheat."
I'm curious to know which millet or millets in particular he has in mind when making such a prognostication. That could be the beginning of a very interesting conversation about flavors and cooking/baking characteristics of various millets.
